Mumzy’s Soup

This hearty spicy soup can be made with a meat choice of either ground beef, cubed round steak or de-boned rotisserie chickens (already cooked from the grocery store – my favorite)! This is a soup that is ready as soon as you assemble it and heat it up.

This hearty spicy soup can be made with a meat choice of either ground beef, cubed round steak or de-boned rotisserie chickens (already cooked from the grocery store – my favorite)! This is a soup that is ready as soon as you assemble it and heat it up.

Ingredients:
• 4 cans ranch style beans (I like to mix and add a can or two with spices in it. I also always substitute 2 cans of black beans for two of the ranch style beans. If I can’t find ranch style beans, I use two cans of mild chili beans or whatever looks good on the shelf)
• 4 cans Rotel (You can use whatever spice level you want, regular, Mexican, or HOT!)
• 4 cans minestrone soup
• 2 cans white shoe-peg corn
• Add chicken broth as needed
• 2 rotisserie cooked chickens or 1-2 lbs. ground beef or 1-2 lbs. round steak cubed

Cooking Instructions:
Open all cans of beans, corns and soup, pour into a large pot. Peel skin from rotisserie chicken, de-bone meat and toss into soup. Add chicken broth plus any water to make soup the consistency you enjoy. Heat and serve. This makes a BIG pot of soup. ** If using ground beef or round steak, brown meat with garlic and onion before adding to other soup ingredients.
